Step 1 — Define Your Whiskey Vision

Every whiskey starts with a why. Are you launching a single malt? A bold rye? Something that nods to bourbon traditions but carries a new flavour twist? A category-challenging fancy fermented oat? Step 2 — Select Raw Materials

Traditional whiskey starts with cereal grains — malted barley, rye, corn, oat or wheat — chosen based on the style you’re aiming for. More importantly, the quality and origin of these grains can have a subtle or dramatic impact on aroma and taste. Contract distilleries can source appropriate grain types responsibly on your behalf, and assist in recipe design in order to offer the perfect flavour profile for your target audience. 


Step 3 — Fermentation

Once your grain bill is set, the mash is created and yeast is added to kick off fermentation. This is where sugars are converted into alcohol and flavour compounds begin to develop. Controlling fermentation time, temperature and selecting the ideal yeast strain is essential to creating a robust “wash” that forms the foundation of your whiskey, and it is where we can create the most exciting flavours, which develop in the cask.


Step 4 — Distillation

Once the fermentation is complete, distillation is where the alcohol created by the yeast is separated and refined. Using pot stills or column stills, the wash (or mash) is carefully heated — vapours rise, are condensed back into liquid, and the distiller cuts the heart of the run (the best part) to form what is known as new-make spirit (whiskey before it is aged). Different styles may call for multiple distillations or specific still setups. 

For contract clients, this process is entirely tailored to your recipe and desired end flavour.


Step 5 — Maturation

Here’s the part that separates whiskey from a “new make” spirit: time. Whiskey must be aged in oak barrels — often for years, but a minimum of 3 — to develop depth, character, and complexity. Contract distilleries can source barrels including bourbon-seasoned, sherry casks, wine casks, or refill barrels, and we also offer bonded storage for aging on-site at our facility in Kent. 

Patience here pays off. As the spirit interacts with wood, it picks up subtle vanillas, spice, tannins and colour that define the style.


Step 6 — Tasting, Blending & Bottling

Once maturation is moving in the right direction, tasting is essential. Many distilleries offer tasting samples throughout the aging process so you can make decisions on blending, proofing and finishing.

Blending — combining barrel samples to achieve a consistent house style — is an art in itself. After blending, the whiskey is proofed, filtered if needed, and bottled with labels that tell your story.
